This super easy recipe proves that plant-based bak

This super easy recipe proves that plant-based baking can be as easy as pie! Enjoy!

🥧 THE EASIEST ONE-BOWL PUMPKIN PIE 🥧

Makes 1 pie

1⁄4 tsp tsp ground ginger
1⁄4 tsp tsp ground cloves
1 can canned pumpkin puree
1 cup unsweetened plant-based milk
3/4 cup sugar
1/4 cup corn starch
1/2 tsp salt
2 premade pie crust (non-dairy)
1⁄4 tsp nutmeg
1 tsp cinnamon

Preheat the oven to 375F (190C).

1. Mix the canned pumpkin, 'milk', sugar, cornstarch, salt & spices. Whisk together until completely combined.

2. Pour the mixture into the pie shell.

3. Bake for 40-45 minutes.

4. Remove from the oven & let it cool for about 15 minutes. Then, put it in the fridge for about an hour or overnight. The flavors will develop a lot overnight.

5. Serve with some non-dairy whipped cream for extra deliciousness! There are lots of great pre-made varieties. Check your local store for non-dairy whipped cream, either in the freezer or refrigerator section. To make your own, refrigerate full fat coconut milk overnight. Scoop out the solid piece and mix with a hand-mixer or a standing mixer on high until light & fluffy. Add a touch of vanilla and/or sugar if desired. Store in the refrigerator until ready to eat.
